Seriously Good Burger and Tomato-Chilli Relish

Everyone loves a good burger and not everyone can find a good burger! This is my recipe from when I worked at a gastropub in Clerkenwell, The Peasant and it did pick up quite a following during my time there. The tomato-chilli relish is really what sets this beauty apart. One could easily make a few of these, wrap them in clingfilm and freeze them.

Burger me up!

500 g – Beef mince (or lamb, pork, chicken)

1 – onions chopped2

2 cloves – garlic, minced

1/4 bunch – chopped parsley

1 tsp – paprika

1 – diced chilli

1/2 tbsp – grain mustard

1 – egg

50 grams – breadcrumbs

10 g – salt

1 tbsp – cracked black pepper.

20 ml – milk

Method: Mix it all together! Shape into burgers and cook! About 10-15 minutes in an oven heated to 200c should do it.

Tomato-Chilli Relish

1 tin – chopped tomatoes

2 – whole dry red chilli

1¼ tsp – ground red chilli

200g sugar

30 ml – Vinegar (white wine or malt)

Method: Add all in a heavy-bottom pan, bring to the boil and simmer, stirring regularly for about 30 minutes or until the mix is thick and glossy.
